That’s how many tacos I made at my Taco Tasting…that’s A LOT of tacos. But, it was SO much fun and a wonderful experience!
My friend, Eli, works at Veritas in Dallas and she and I put our heads together and came up with this fun event! We thought it would be a great way to kick off summer and something that everyone would enjoy! And we were right! Initially, I was anticipating 20-30 people at the most! But, that number quickly changed!
So, here was my Taco Tasting Menu:
1. Pulled Pork with Avocado Butter, Corn Salad, and Spicy Sour Cream
2. BBQ Chicken with Whiskey BBQ Sauce, Caramelized Onions, and Blue Cheese
3. Blackened Fish with Mango Salsa and Avocado Cilantro Sour Cream with Habanero Infused Vodka
On the Side: Tequila Salsa
Now, these tacos are fairly simple. BUT, prepping for about 50 people….?? By myself…?? That was a daunting task. It all started the day before when I shucked and roasted corn, chopped jalapenos, red onions, white onions, tomatoes, poblanos, mangos (this one sucked), cilantro…and so on and so on…
Sunday morning I woke up at 4am (ugggghhhh) and checked on my pork that I roasted all night and began again! Thankfully, all I had left to do was cook the chicken! Now, the only thing that would not be made ahead was the fish. So, we had a slight concern as to how were were going to cook chicken and warm tortillas without getting WAY behind. But, we managed to pull it off! And everyone seemed to REALLY enjoy everything!
Feeding that many people was definitely scary! But, I had so much fun and I can’t wait until the next event!
