About a month or so ago, someone recommended that I cook a private dinner for a financial company. It was for 20 people, 5 courses, and going to be held at Method, a hip, new coffee shop in Dallas. Of course I said I would gladly do it! So, I first came up with the menu…
roasted tomatoes, red bell peppers, poblanos with smoked bacon
Brussels Sprout Salad
radicchio, green grapes, pecorino, pancetta, toasted walnuts, coffee & balsamic vinaigrette
shiitake mushrooms and black truffle
*Slow Roasted Beef Tenderloin
espresso rub, root vegetable puree, bourbon BBQ sauce
Brownie & Ice Cream
guinness, kahlua, spicy caramel, warm coffee fudge sauce
parmesan, goat cheese, fire roasted tomato sauce, red pepper
Ok, menu done….great! Oh wait…what about prep? This was definitely the biggest kitchen undertaking that I have had. Now, the dinner was taking place on a Friday night. So, I took a half day at work on Thursday and all of Friday to prep. NOTE: I live in an apartment…space is not on my side. Here was the result:
And the kitchen pretty much looked like that all day.
On the actual day of the dinner, my mom came and to help she knew I would need it…plus, if things went south I could yell and she would still love me the next day.
Needless to say, we had a BLAST! Everything went smoothly…better than smoothly! The guests LOVED everything and Method now wants to do this on a monthly basis! Excited does not even begin to cover it…check out the photos of my plated dishes and watch my short video!
